The grapes for this wine are from their estate in Giavera del Montello, a beautiful unspoiled hilly area in the north of the province of Treviso. They are grown on mineral-rich soils that give good structure, and the wine is fermented with indigenous, wild, yeasts that yield broad aromatic notes and flavours.
This Prosecco is Asolo Superiore DOCG, one of the two highest appellation levels for Prosecco in the Italian system. It is always well reviewed, showing up on a list in Forbes, well-scored by James Suckling and awarded trophies by Falstaff.
And while both Valdobbiadene and Asolo were created as DOCGs at the same time in 2009, the smaller Asolo seems to have remained more of an insider's secret.
